The Executive Chef, Hermitage Hotel is looking for ambitious CDP's who passionate about food and looking to join us on a permanent basis and develop their skills and knowledge. Our kitchen team produces an average of 50,000 meals a month meaning our production volumes for hot and cold service are very high, but our mission is clear - to ensure every guest’s meal and experience is to the same high standard. At The Hermitage Hotel, located in the remote Aoraki/Mount Cook National Park between the stunning mountains, we offer our guests a variety of dining options through the summer that include the iconic Panorama Room, premier Alpine Restaurant, Sir Edmund Hillary Café, Snowline Bar, and the Chamois Bar and Grill. You may work in any or all our outlets, which makes this an exciting opportunity to broaden your culinary experience and put your skills to the test. In this role, you will be responsible for: • Maintaining high guest satisfaction through preparing and serving quality dishes • Planning daily operational requirements, including equipment needs, food stock, and time management for delivery of food and service • Working with junior and senior team members to monitor the quality of dishes at all stages of preparation, presentation, and service • Supporting cost control and budget management through accurately estimating food costs and controlling usage, wastage, and specials • Assisting in the management of wage labour costs through good time management and training, and supporting other staff • Working collaboratively as a member of the kitchen team to maintain a pleasant and safe working environment and ensure efficiency in preparation of food to exceed customers’ expectations • Maintaining standards and displaying knowledge of all relevant Health and Safety standards and food preparation regulations What you will bring to the role • Experience working in a fast paced or high production kitchen is essential with six months or more preferred • Culinary qualifications and education are preferred, and able to converse in English. • A commitment to food safety • A can-do attitude and a willingness to learn • A friendly and professional manner, with excellent communication skills • Flexible and adaptable nature, able to multi-task, and work at pace.
